In the mid-19th century, Mohammed Aziz worked as a chef in the imperial kitchen of the last Mughal Emperor, Bahadur Shah Zafar, until the emperor was overthrown by the British in 1857 and exiled to Rangoon. In 1911, during the Delhi Durbar for King George V’s coronation, Aziz’s son, Haji Karimuddin, returned to Delhi with the pioneering concept of starting a Dhaba (a roadside eatery) to serve the influx of visitors from across India attending the coronation. Haji Karimuddin’s Dhaba initially offered a simple menu of Alu gosht (mutton with potatoes) and Daal (lentil curry) accompanied by Rumali Roti.
